RESUME

Introduction : Le babenda, autrefois relégué au second plan et même considéré comme un repas pour les pauvres, est de nos jours, très prisé par les populations citadines au Burkina Faso et rencontré dans presque toutes les grandes cérémonies (baptêmes, mariages). L’amélioration de la technologie de sa production améliorerait la qualité de ce mets et contribuerait à la valorisation des céréales et des légumes-feuilles. Objectifs : L’objectif global de cette étude est faire l’inventaire des légumes feuilles et des technologies locales utilisés dans la préparation du babenda en vue d’améliorer sa qualité et sa consommation pour lutter contre la malnutrition. Méthodes : des méthodes d’investigations basées sur la méthode des focus groupes, des enquêtes individuelles et d’interviews semi-structurées ont été utilisées pour receuillir des données auprès des productrices de babenda dans 5 villes du Burkina Faso (Ouagadougou, Bobo-Dioulasso, Koudougou, kaya et Ouahigouya). Résultats : Les résultats de l’étude indiquent que l’Amaranthus hybridus (97,1%), Hisbiscus sabdariffa (100%) et Cleome gynandra (2, 9%) sont les principaux légumes-feuilles utilisés pour la préparation du babenda. Le maïs et/ou le riz sont les céréales de base utilisées. Le babenda se singularise des autres denrées à base de feuilles d’une part par sa composition et d’autre part, par la technologie appliquée sur les légumes-feuilles additionnés. Les technologies traditionnelles de préparations du babenda differents légerement d’une productrice a l’autre mais permettent de degager un digramme commun qui peut etre amélioré. Conclusion : les aspects technologiques de la préparation du babenda restent à améliorer pour une meilleure qualité de cet aliment pour la sécurité alimentaire et la lutte contre la malnutrtion.

ABSTRACT

Introduction: The babenda, once relegated to the background and even considered a meal for the poor, is nowadays very popular with the urban populations in Burkina Faso and met in almost all major ceremonies (baptisms, weddings). Improving the technology of its production would improve the quality of this dish and contribute to the valorization of cereals and leafy vegetables. Objectives: The overall objective of this study is to inventory leafy vegetables and local technologies used in the preparation of the babenda to improve its quality and consumption to fight against malnutrition. Methods: methods of investigation based on the focus group method, individual surveys and semi-structured interviews were used to collect data from babenda producers in 5 cities of Burkina Faso (Ouagadougou, Bobo-Dioulasso, Koudougou, Kaya and Ouahigouya). Results: The results of the study indicate that Amaranthus hybridus (97.1%), Hisbiscus sabdariffa (100%) and Cleome gynandra (2.9%) are the main leafy vegetables used for the preparation of the babenda. Corn and / or rice are the staple cereals used. The babenda distinguishes itself from other leafy foods, both in terms of its composition and the technology applied to leafy vegetables. The traditional technologies of preparation of the babenda differ slightly from one producer to another but allow to find a common diagram that can be improved. Conclusion: the technological aspects of the preparation of the babenda remain to be improved for a better quality of this food for food safety and the fight against malnutrtion.
