RESUME
Introduction : Le «kounou» est une boisson amylacée faite à base de céréales, très prisée par les populations de la région septentrionale du Cameroun. Elle est surtout consommée lors des cérémonies traditionnelles et est commercialisé dans de nombreux marchés. Objectif : Cette étude a été conduite dans le but d’évaluer la qualité physico-chimique et microbiologique du « kounou ». Méthodologie. Après des enquêtes effectuées auprès des producteurs et consommateurs, quelques analyses physico-chimiques (pH et acidité titrable) et microbiologiques ont été effectuées sur les échantillons prélevés auprès de dix productrices. Résultats : Les résultats obtenus ont révélé que le pH des échantillons varie entre 4,3 ± 0,3 (KMG, Baoliwol) et 5,11 ± 0,09 (KB, Hardé) et l’acidité titrable, entre 2,52 ± 0,52 (KMP Hardé) et 15,57 ± 0,27°D (KMG, Baoliwol). Les analyses microbiologiques ont révélé que certains échantillons présentent flore lactique comprise entre 1,04±0,04 (KM3 de Hardé) et 3,89 ± 0,07 LogUFC/ml (KMG2 de Baoliwol). La concentration en coliformes totaux est comprise entre 2,20 ± 0,03 (KMP2 de Hardé et 4,70±0,06 LogUFC/ml (KP de Palar J) tandis que celle des coliformes fécaux se situe 1,91 ± 0,06 (KMP2 de Hardé) et 4,61 ± 0,01 Log UFC/ml (KMP1 de Salak). La flore aérobie mésophile totale a des valeurs qui oscillent entre 3,07±0,09 (KP1, Salak) et 9,61 ± 0,01 Log UFC/ml (KMP, Hardé). La flore fongique est comprise entre 2,68 ± 0,01 (KB, Hardé) et 8,73±0,08 LogUFC/mL (KMG, Bawliwol). Trois échantillons sur dix contiennent de spores des Clostridium, dont les valeurs sont comprises entre 0,95 ± 0,05 (KMP4 de Hardé) et 1,75 ± 0,03 Log UFC/ml (KB de Hardé). Conclusion : A cause de ce dernier microorganisme, certains échantillons de cette boisson sont impropres à la consommation.

ABSTRACT
Background: The «kounou» is a starchy drink made from cereals, highly prized by the populations of the northern region of Cameroon. It is mainly consumed during traditional ceremonies and is marketed in many markets. Objective: This study was carried out with the aim of evaluating the physico-chemical and microbiological quality of «kounou». Methods: After surveys carried out among producers and consumers, some physico-chemical (pH and titratable acidity) and microbiological analyzes were carried out on the samples taken from ten producers. Results: The results obtained revealed that the pH of the samples varied between 4.3 ± 0.3 (KMG, Baoliwol) and 5.11 ± 0.09 (KB, Hardé) and the titratable acidity, between 2.52 ± 0.52 (KMP Hardé) and 15.57 ± 0.27 ° D (KMG, Baoliwol). Microbiological analyzes revealed that some samples exhibit lactic flora between 1.04 ± 0.04 (KM3 from Hardé) and 3.89 ± 0.07 LogUFC / ml (KMG2 from Baoliwol). The concentration of total coliforms is between 2.20 ± 0.03 (KMP2 of Hardé and 4.70 ± 0.06 LogUFC / ml (KP of Palar J) while that of fecal coliforms is 1.91 ± 0, 06 (KMP2 from Hardé) and 4.61 ± 0.01 Log CFU / ml (KMP1 from Salak). The total mesophilic aerobic flora has values which oscillate between 3.07 ± 0.09 (KP1, Salak) and 9, 61 ± 0.01 Log CFU / ml (KMP, Hardé) The fungal flora is between 2.68 ± 0.01 (KB, Hardé) and 8.73 ± 0.08 LogUFC / mL (KMG, Bawliwol). Three out of ten samples contain Clostridium spores, the values of which are between 0.95 ± 0.05 (KMP4 from Hardé) and 1.75 ± 0.03 Log CFU / ml (KB from Hardé). Conclusion: Because of the latter microorganism, some samples of this drink are unfit for consumption.
