RESUME
Introduction: Trente cas d’intoxication aigue au cyanure actif dans le foufou du manioc sec ont été enregistrés en 2007 à l’hôpital provincial général de référence de Bukavu (HPGRB) et à l’hôpital général de référence de Bagira (HGRB). Objectif : L’Objectif de cette étude était d’évaluer la dégradation du taux de cyanure dans les extraits aqueux de maniocs secs vendus à Bukavu. Méthodes : Une étude transversale et rétrospective a été menée sur les échantillons de maniocs secs vendus au Beach Mwahanzi en provenance des territoires administratifs d’Idjwi, de Kabare et de Kalehe. Les échantillons récoltés dans les sachets noirs ,50 grammes hydrolysés, distillés, analysés qualitativement et quantitativement après chaque sept heures jusqu’atteindre 70 heures. Résultats : Les principaux résultats révèlent la présence du cyanure par une couleur verdâtre en présence d’une solution NaOH 0,75M. Les concentrations initiales, finales et moyennes en mg/Kg du cyanure sont respectivement hors, dans les normes et se présentent comme suit : Idjwi 17,06±0,06 ; 2,09±0,01 et 6,63±1,49 avec R2=0,9849; Kabare 18,06±0,04 ; 3,06±0,00 et 7,75±1,51 avec R2= 0,9845, Kalehe 19, 27±0,02 ; 3.6±0,06 et 8,51±1,58 avec R2= 0,9788. Le test Anova à un facteur n’a pas montré une différence significative entre les concentrations de trois sites (p>0,05), une forte corrélation entre les trois échantillons est observée et une exposition à l'intoxication cyanhydrique était possible car hors de la norme de FAO/OMS de 10 mg par kg de poids sec. Conclusion: L’étude recommande que la population respecte la durée du séchage de maniocs amers pour réduire le taux de cyanure.

Conclusion: The study recommends that the population respect the duration of drying of bitter cassava to reduce cyanide levels.
